Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment or lightly grease it.
  2. Hollow out each tomato by slicing off the top and gently scooping out seeds and pulp, leaving a sturdy shell about ½ inch thick.
Filling
  1. Sauté garlic and onion in 1 tablespoon olive oil over medium heat until soft and translucent, about 4 minutes.
  2. Combine cooled aromatics, breadcrumbs, Parmesan, chopped basil and parsley, red pepper flakes, lemon zest, and toasted pine nuts in a bowl.
Stuff and Bake
  1. Stuff each tomato generously with the prepared filling, mounding it slightly above the rim.
  2. Bake in the preheated 375°F oven for 20–25 minutes, until tomatoes are tender and the topping is golden brown.
